Blitz until the leaves have broken down and the sugar is tinted green. You can skip this step if you prefer, and simply finely chop the thyme leaves.<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>Combine the flour, baking powder and salt, sift into a large bowl (use a stand mixer, if you have one, with the paddle attachment).<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>Add the 225g caster sugar, thyme sugar and lemon zest, mix to combine.<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>Make a well in the centre of the dry ingredients, add the lemon juice, water, egg yolks, Monini Delicato EVOO and vanilla extract, mix until smooth.<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>In another, really large bowl, whisk the 7 egg whites until foamy, add the cream of tartar then mix until you have soft peaks, gradually add the additional 75g caster sugar, whisking until you have firm peaks and the sugar has dissolved.<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>Fold the egg whites into the batter in three stages.<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>Pour the batter into an ungreased, unlined angel food cake tin and bake for 55-60 minutes.<br><a href=\"https:\/\/www.monini.com\/en-au\/p\/classico-extra-virgin-olive-oil\"><\/a><\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>Remove the cake from the oven and immediately invert to cool, if your tin doesn\u2019t have \u201cfeet\u201d turn the tin upside down, and carefully feed the centre of the tube over the neck of a wine bottle. It\u2019s really important to cool the cake upside down as this prevents it shrinking and gives the cake its beautiful light texture.<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>When completely cool, run a sharp knife around the inside and the centre section of the cake tin, remove the cake from the tin, run the knife between the cake and the base of the tin, finally invert onto your serving plate.<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>Pour the frosting over the cake, allowing it to run down the sides.<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>Slice giant slabs of cake with a serrated knife and enjoy!<br><a href=\"https:\/\/www.monini.com\/en-au\/p\/delicato-extra-virgin-olive-oil\"><\/a><\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div style=\"height:0.25em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n<\/section>\n","protected":false},"excerpt":{"rendered":"","protected":false},"author":3,"featured_media":19434,"menu_order":8,"template":"","meta":{"_acf_changed":false,"footnotes":""},"cat_recipe":[239],"difficulty_recipe":[184],"course_recipe":[188],"class_list":["post-19433","recipe","type-recipe","status-publish","has-post-thumbnail","hentry","cat_recipe-all-recipes-en-au","difficulty_recipe-medium","course_recipe-dessert"],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v25.8 -
