Season with a pinch of salt and set aside while you prepare the rest of the ingredients.\u00a0<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>Grate garlic clove and place in a small bowl with the lemon juice. Set aside.\u00a0<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>Remove the thick stems from the parsley. Use a very sharp knife to finely slice the stems and leaves and then place chopped parsley into a large bowl.\u00a0<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>Gather the mint leaves into a bunch and finely chop, then add them to the bowl with the parsley. Thinly slice the scallions crosswise and add them to the bowl with the parsley and mint.\u00a0<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>Add the bulgur, garlic and lemon juice, Monini Dauno Gargano PDO EVOO, and cumin to the bowl. Drain the excess water from the tomatoes and cucumbers and then add them to the bowl. Stir everything together and season with salt and pepper.
