Set aside.\u00a0<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.\u00a0<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>In the bowl of a stand mixer (or using an electric mixer), combine olive oil, brown sugar, and granulated sugar. Mix on medium speed for 2-3 minutes, until smooth and well-combined. With the mixer on low speed, add the eggs one at a time, followed by the vanilla extract. Mix for one minute more until homogenized.\u00a0<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>Gradually add the dry ingredients and mix until just combined, followed by the chocolate chunks.\u00a0<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>Using a 1 1\/2 tbsp cookie scoop, dollop cookie dough onto prepared pan, leaving 2\u201d of space between each cookie. Bake for 10-11 minutes, until the edges just begin to turn golden brown and the tops are set.
