Slice the head of garlic in half crosswise and drizzle liberally with Monini Originale Extra Virgin Olive Oil. Wrap both halves tightly in aluminum foil and roast for 30-35 minutes, until garlic cloves are soft and golden. Let cool completely.<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>Place the cubed potatoes in a large pot and cover completely with cold water. Bring to a boil and then simmer for 15-20 minutes, until potatoes are tender. Reserve 1\/4 cup of cooking liquid, and then drain potatoes.<\/p>\n\n\n <\/div>\t\n<\/div>\n\n\n<div class=\"step-preparation \">\n <div>\n\t\n\n<p>Return drained potatoes to the pot. Squeeze roasted garlic out of its skin and add to the pot with potatoes, along with the salt. Mash potatoes and garlic, then add the olive oil and continue to mash\/stir until combined. Thin to your desired consistency with reserved cooking liquid or a few tablespoons of milk.
