Conna\u00eetre et suivre certaines bonnes pratiques de conservation est utile pour maintenir son int\u00e9grit\u00e9.<\/p>\n<\/div><\/div>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<div class=\"wp-block-columns\">\n<div class=\"wp-block-column\">\n<h6 class=\"wp-block-heading\">PR\u00c9AMBULE : LA COULEUR DE L\u2019HUILE<\/h6>\n\n\n\n<p>Chaque huile vierge extra peut pr\u00e9senter des nuances chromatiques diff\u00e9rentes du vert net \u00e9galement tr\u00e8s intense, au vert avec des reflets l\u00e9gers de jaune, jusqu\u2019au jaune intense avec de l\u00e9g\u00e8res notes de vert. Les diff\u00e9rentes notes chromatiques d\u00e9pendent de plusieurs facteurs\u00a0: tout d\u2019abord, la vari\u00e9t\u00e9 de l\u2019olive et son degr\u00e9 de maturation, mais \u00e9galement le type d\u2019installation d\u2019extraction et la fa\u00e7on dont elle est utilis\u00e9e.\u00a0<strong>Aucune gradation chromatique est donc un indice d\u2019une bonne ou d\u2019une mauvaise qualit\u00e9<\/strong>\u00a0de l\u2019huile, sauf le cas o\u00f9 celle-ci pr\u00e9sente des reflets ros\u00e9s, dus \u00e0 la d\u00e9gradation de la chlorophylle et \u00e0 la pr\u00e9sence de la b\u00eata-carot\u00e8ne, qui deviennent \u00e9vidente lorsqu\u2019une huile a \u00e9t\u00e9 expos\u00e9e \u00e0 la lumi\u00e8re et la couleur vert de la chlorophylle s\u2019att\u00e9nue rendant plus \u00e9vident la couleur brun-ros\u00e9e des pigments carot\u00e9no\u00efdes pr\u00e9sents dans l\u2019huile dont la couleur est en g\u00e9n\u00e9ral bien cach\u00e9e par le vert de la chlorophylle.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h6 class=\"wp-block-heading\"><strong>LA LUMI\u00c8RE<\/strong><\/h6>\n\n\n\n<p>Directe ou indirecte, la lumi\u00e8re endommage les caract\u00e9ristiques chimiques, physiques et organoleptiques d\u2019une huile.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column\">\n<p>C\u2019est la raison pour laquelle il est important de la conserver \u00e0 l\u2019abri de la lumi\u00e8re directe du soleil et de lampes fortes. Pour des p\u00e9riodes plus prolong\u00e9es, il est pr\u00e9f\u00e9rable un endroit sombre et frais.
