L\u2019huile d\u2019olive vierge extra a une acidit\u00e9 libre maximale de 0,8&nbsp;% et pr\u00e9sente d\u2019autres caract\u00e9ristiques pr\u00e9vues pour cette cat\u00e9gorie par la Commission en conformit\u00e9 avec l\u2019article 75&nbsp;par. 2 du R\u00e8g. L\u2019installation \u00e0 cycle continu pr\u00e9voit un seul cycle de production, gr\u00e2ce \u00e0 la pr\u00e9sence du d\u00e9canter qui divise le tourteau, de l\u2019eau de v\u00e9g\u00e9tation et du mo\u00fbt. En revanche, dans les installations \u00e0 cycle discontinu, on utilise les broyeurs \u00e0 meules en granite pour le pressurage, on r\u00e9colte la p\u00e2te obtenue dans les scourtins et on passe enfin au pressurage m\u00e9canique. Cette typologie de pressoir est de plus en plus rare, puisque l\u2019on privil\u00e9gie d\u00e9sormais l\u2019utilisation de technologies de plus grande qualit\u00e9, au meilleur rendement et \u00e0 Tout en maintenant la m\u00eame composition en acides gras des huiles d\u2019olives vierges, l\u2019huile raffin\u00e9e, appel\u00e9e \u00e9galement rectifi\u00e9e, est pratiquement inodore et sans substance b\u00e9n\u00e9fique comme les polyph\u00e9nols.
