suivant les processus m\u00e9caniques ou autres processus physiques, dans des conditions qui pr\u00e9viennent toute alt\u00e9ration de l\u2019huile.<\/p>\n\n\n\n<p>En fonction de l\u2019acidit\u00e9, on les divise en:<\/p>\n\n\n\n<div style=\"height:0.5em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<\/div><\/div>\n\n\n\n<div class=\"wp-block-columns\">\n<div class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Il s\u2019agit d\u2019un m\u00e9lange dans n\u2019importe quelle proportion d\u2019huile rectifi\u00e9es d\u2019olive et d\u2019huiles vierges extra ou vierges, qui de par la loi pr\u00e9sente une acidit\u00e9 libre maximale de 1&nbsp;%.<\/p>\n\n\n\n<p>Gr\u00e2ce \u00e0 ses caract\u00e9ristiques, elle est conseill\u00e9 pour les&nbsp;<strong>fritures<\/strong>, comme remplacement valable des huiles de graines, ou pour la cuisson des aliments.&nbsp;<\/p>\n\n\n\n<div style=\"height:0.25em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h6 class=\"wp-block-heading\">HUILE D\u2019OLIVE RAFFIN\u00c9E<\/h6>\n\n\n\n<p>Tout en maintenant la m\u00eame composition d\u2019acides gras typique des huiles d\u2019olive, l\u2019huile raffin\u00e9e ou rectifi\u00e9e est inodore, incolore et sans saveur, priv\u00e9e de substances b\u00e9n\u00e9fiques comme les polyph\u00e9nols et commercialisable uniquement au d\u00e9tail.<\/p>\n\n\n\n<p>Elles sont obtenues gr\u00e2ce \u00e0 un&nbsp;<strong>processus industriel de raffinement<\/strong>&nbsp;qui r\u00e9duit l\u2019acidit\u00e9 jusqu\u2019\u00e0 la limite \u00e9tablie de 0,3&nbsp;%, \u00e9limine les substances oxyd\u00e9es et corrige les d\u00e9fauts organoleptiques des huiles dont elles proviennent.&nbsp;<\/p>\n\n\n\n<div style=\"height:0.5em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">LES HUILES DE GRAINES<\/h2>\n\n\n\n<div style=\"height:0.25em\" aria-hidden=\"true\" class=\"wp-block-column\">\n<p>Elles comprennent toutes les huiles extraites des graines ol\u00e9agineuses gr\u00e2ce \u00e0\u00a0<strong>l\u2019utilisation de solvant<\/strong>\u00a0et soumises par la suite \u00e0 des processus de raffinement. Les graines sont d\u2019abord s\u00e9ch\u00e9es, puis moulues, mises en p\u00e2te avec l\u2019hexane, comme cela est effectu\u00e9 pour les huiles de tourteau, en enfin\u00a0<strong>raffin\u00e9es<\/strong>.<\/p>\n<\/div>\n<\/div>\n\n\n\n<div style=\"height:0.5em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<div class=\"wp-block-group is-style-spaced\"><div class=\"wp-block-group__inner-container\">\n<h2 class=\"wp-block-heading\">HUILE DE TOURTEAU D\u2019OLIVE<\/h2>\n\n\n\n<div style=\"height:0.25em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Il s\u2019agit d\u2019une huile\u00a0<strong>extraite \u00e0 l\u2019aide de solvant<\/strong>\u00a0des r\u00e9sidus secs des olives \u00e0 peine press\u00e9es, puis soumises \u00e0 un processus industriel de raffinement et enfin m\u00e9lang\u00e9 avec des huiles vierges commestibles ou vierge extra, dans n\u2019importe quelle proportion. La loi \u00e9tablit que l\u2019acidit\u00e9 des huiles de tourteau ne doit pas d\u00e9passer 1\u00a0%.<\/p>\n\n\n\n<div style=\"height:0.25em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h6 class=\"wp-block-heading\"><strong>HUILE DE TOURTEAU D\u2019OLIVE BRUTE<\/strong><\/h6>\n\n\n\n<p>Cette huile est\u00a0<strong>extraite \u00e0 l\u2019aide de solvant<\/strong>\u00a0ou tout autre processus physique des olives d\u00e9j\u00e0 moulues et doit \u00eatre soumises \u00e0 un processus de raffinement.<\/p>\n\n\n\n<div style=\"height:0.25em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h6 class=\"wp-block-heading\">HUILE DE TOURTEAU D\u2019OLIVE RAFFIN\u00c9E<\/h6>\n\n\n\n<p>Elle est obtenue du\u00a0<strong>raffinement de l\u2019huile de tourteau d\u2019olive brute<\/strong>\u00a0et peut atteindre un niveau d\u2019acidit\u00e9 libre de 0,3\u00a0%. L\u2019huile de tourteau raffin\u00e9e peut \u00eatre commercialis\u00e9e uniquement au d\u00e9tail.<\/p>\n\n\n\n<div style=\"height:0.5em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">AUTRES HUILES<\/h2>\n\n\n\n<div style=\"height:0.25em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h6 class=\"wp-block-heading\">LE PROCESSUS DE RAFFINEMENT<\/h6>\n\n\n\n<p>Les huiles non class\u00e9s comme vierge extra ou vierge, c\u2019est-\u00e0-dire les huiles lampantes, peuvent \u00eatre utilis\u00e9es uniquement apr\u00e8s un processus industriel, dit raffinement ou rectification, qui en corrige l\u2019acidit\u00e9 et les d\u00e9fauts organoleptiques. Le raffinement est compos\u00e9 de trois passages\u00a0:<\/p>\n\n\n\n<div style=\"height:0.25em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n<\/div><\/div>\n\n\n\n<section class=\"slider-step \">\n\t<div class=\"container-wrapper\">\n\t\t<div class=\"swiper swiperStep swiperSlides\">\n\t\t\t<div class=\"swiper-wrapper\">\n\t\t\t\t\t\n\n<div class=\"card-slider-step\">\n\t<div class=\"card-body\">\n\t\t\n\n<h6 class=\"wp-block-heading\">La d\u00e9acidification<\/h6>\n\n\n\n<p>L\u2019huile est trait\u00e9e avec une solution \u00e0 base de soude, qui en s\u2019unissant aux acides gras libres formes des savons. \u00c0 ce niveau, on proc\u00e8de \u00e0 un lavage avec de l\u2019eau, pour faire en sorte que les savons se dissolvent et que reste une huile neutralis\u00e9es ou d\u00e9acidifi\u00e9e.<\/p>\n\n\n\t<\/div>\n<\/div>\n\n\n\n<div class=\"card-slider-step\">\n\t<div class=\"card-body\">\n\t\t\n\n<h6 class=\"wp-block-heading\">La d\u00e9coloration<\/h6>\n\n\n\n<p>Les substances oxyd\u00e9es des huiles lampantes sont \u00e9limin\u00e9es en mettant l\u2019huile en contact avec les charbons v\u00e9g\u00e9taux activ\u00e9s ou des terres d\u00e9colorantes. Une fois cette phase termin\u00e9e, l\u2019huile a une couleur jaune paille, similaire \u00e0 celle des huiles de graines communes.<\/p>\n\n\n\t<\/div>\n<\/div>\n\n\n\n<div class=\"card-slider-step\">\n\t<div class=\"card-body\">\n\t\t\n\n<h6 class=\"wp-block-heading\">La d\u00e9sodorisation<\/h6>\n\n\n\n<p>Pour \u00e9liminer toute odeur d\u00e9sagr\u00e9able, l\u2019huile est port\u00e9e \u00e0 une temp\u00e9rature de 230\u00a0\u00b0C sous grand vide. \u00c0 la fin de ce dernier processus, l\u2019huile rectifi\u00e9e sera pratiquement inodore et aura un l\u00e9ger go\u00fbt d\u2019amande.<\/p>\n\n\n\t<\/div>\n<\/div>\n\n\n\t\t\t<\/div>\n\t\t\t<div class=\"swiper-buttons\">\n\t\t\t\t<div class=\"swiper-button swiper-gallery-prev\">\n\t\t\t\t\t<svg class=\"icon\" style=\"rotate: 180deg\"><use xlink:href=\"https:\/\/shumans-monini-stage.ccws.it\/wp-content\/themes\/monini\/assets\/dist\/svg\/sprite-default.svg#icon-arrow\"><\/use><\/svg>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"swiper-button swiper-gallery-next\">\n\t\t\t\t\t<svg class=\"icon\"><use xlink:href=\"https:\/\/shumans-monini-stage.ccws.it\/wp-content\/themes\/monini\/assets\/dist\/svg\/sprite-default.svg#icon-arrow\"><\/use><\/svg>\n\t\t\t\t<\/div>\n\t\t\t<\/div>\n\t\t<\/div>\n\t<\/div>\n<\/section>\n\n\n\n<div style=\"height:0.5em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<div class=\"wp-block-group is-style-spaced\"><div class=\"wp-block-group__inner-container\">\n<h3 class=\"wp-block-heading\">LE PROCESSUS D\u2019EXTRACTION \u00c0 L\u2019AIDE DE SOLVANT<\/h3>\n\n\n\n<div style=\"height:0.25em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Le tourteau vierge, c\u2019est-\u00e0-dire le r\u00e9sidu sec laiss\u00e9 par les olives moulues, contient encore une infime quantit\u00e9 d\u2019huile&nbsp;; pour le r\u00e9cup\u00e9rer, il est transport\u00e9 dans les \u00e9tablissements de processus de tourteau, o\u00f9 il sera soumis \u00e0 un premier processus de s\u00e9chage.<\/p>\n\n\n\n<p>On proc\u00e8de d\u2019abord au m\u00e9lange du tourteau s\u00e9ch\u00e9 avec l\u2019hexane, un solvant qui contribue \u00e0 faire fondre toute l\u2019huile puis de s\u00e9parer la partie solide de celle liquide, dite huile hexane.<\/p>\n\n\n\n<p>L\u2019huile hexane est enfin distill\u00e9e pour \u00e9loigner le solvant et obtenir l\u2019huile de tourteau brute, caract\u00e9ris\u00e9 par une acidit\u00e9 naturelle \u00e9lev\u00e9e, un go\u00fbt d\u00e9sagr\u00e9able et la pr\u00e9sence de toutes les substances oxyd\u00e9es qui s\u2019\u00e9taient form\u00e9es pendant le stockage du tourteau. Pour devenir comestible, elle a besoin d\u2019un processus de raffinement, au terme duquel on obtiendra l\u2019<strong>huile de tourteau d\u2019olive raffin\u00e9e<\/strong>.<\/p>\n\n\n\n<div style=\"height:0.5em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>LA QUALIT\u00c9 ET LA PURET\u00c9 DES DIFF\u00c9RENTES HUILES\u00a0<\/strong><\/h3>\n\n\n\n<div style=\"height:0.25em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>Avec la REG.CEE 2568 de 1991, la Communaut\u00e9 europ\u00e9enne a d\u00e9fini les caract\u00e9ristiques de qualit\u00e9 et de puret\u00e9 auxquelles chaque huile d\u2019olive et de tourteau doit r\u00e9pondre, a r\u00e9glement\u00e9 les m\u00e9thodes d\u2019analyses valables pour tous les pays et fix\u00e9 les valeurs limites des param\u00e8tres utilis\u00e9s pour identifier l\u2019huile d\u2019olive et ses cat\u00e9gories de marchandises.<\/p>\n\n\n\n<p>Au cours des ann\u00e9es, diff\u00e9rentes modifications ont \u00e9t\u00e9 apport\u00e9es, dont la R\u00e8g. 61\/2011, qui pour la premi\u00e8re fois introduit l\u2019application d\u2019une m\u00e9thode sensorielle \u00e0 l\u2019\u00e9valuation des huiles, le&nbsp;<strong>Test panel<\/strong>.<\/p>\n\n\n\n<div style=\"height:0.5em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"wp-block-heading\">LES R\u00c8GLEMENTATIONS EN EUROPE<\/h3>\n\n\n\n<div style=\"height:0.25em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p>La REG.CEE 29\/2012 \u00e9tablit quelles sont les informations obligatoires et quelles sont celles facultatives \u00e0 ins\u00e9rer sur les \u00e9tiquettes des huiles d\u2019olive, comme int\u00e9gration des normes g\u00e9n\u00e9rales relatives aux produits alimentaires et \u00e0 leur publicit\u00e9 du REG.CEE 2000\/2013.<\/p>\n\n\n\n<div style=\"height:0.25em\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h6 class=\"wp-block-heading\">LA D\u00c9SIGNATION DE L\u2019ORIGINE\u00a0:<\/h6>\n\n\n\n<p>De par la loi, l\u2019\u00e9tiquette ant\u00e9rieure des huiles vierges extra et vierges d\u2019olive doit pr\u00e9senter le nom du pays d\u2019origine. Par Ex\u00a0: \u00ab\u00a0100\u00a0% Italien\u00a0\u00bb, \u00ab\u00a0Produit en Italie\u00a0\u00bb, \u00ab\u00a0Produit espagnol\u00a0\u00bb, \u00ab\u00a0100\u00a0% Tunisie\u00a0\u00bb, m\u00e9caniques\u00a0\u00bb.<\/p>\n\n\n\t<\/div>\n<\/div>\n\n\n\n<div class=\"card-slider-step\">\n\t<div class=\"card-body\">\n\t\t\n\n<h6 class=\"wp-block-heading\"><strong>Pour l\u2019huile vierge<\/strong><\/h6>\n\n\n\n<p>\u00ab\u00a0Huile d\u2019olive obtenue directement des olives et uniquement \u00e0 l\u2019aide de processus class=\"card-body\">\n\t\t\n\n<h6 class=\"wp-block-heading\"><strong>Pour l\u2019huile de tourteau d\u2019olive\u00a0<\/strong><\/h6>\n\n\n\n<p>\u00ab\u00a0Huile contenant uniquement des huiles d\u00e9riv\u00e9es du travail du produit, obtenue apr\u00e8s l\u2019extraction de l\u2019huile d\u2019olive et des huiles obtenues directement des olives\u00a0\u00bb \u2013 ou bien \u2013 \u00ab\u00a0huile contenant uniquement des huiles provenant du traitement du tourteau d\u2019olive et des huiles obtenues directement des olives\u00a0\u00bb.<\/p>\n\n\n\n<p>En cas de m\u00e9lange d\u2019huiles provenant de pays diff\u00e9rents, les informations pr\u00e9sentes sur l\u2019\u00e9tiquette seront, en fonction des cas, \u00ab&nbsp;d\u2019olives r\u00e9colt\u00e9es et moulues dans l\u2019Union europ\u00e9enne&nbsp;\u00bb, \u00ab&nbsp;M\u00e9lange d\u2019huile de l\u2019Union europ\u00e9enne&nbsp;\u00bb, \u00ab&nbsp;Produit avec des huiles de pays et non de l\u2019Union
