Vi har arbetat h\u00e5rt f\u00f6r att erh\u00e5lla en \u00f6verl\u00e4gsen kvalitet och sprida kunskapen om extra jungfruolivolja.<\/p>\n\n\n\n<p>2001 k\u00e4nde vi att vi beh\u00f6vde f\u00f6rb\u00e4ttra v\u00e5rt urval genom att \u00f6ka de analytiska testerna l\u00e4ngs hela produktionskedjan: val av olivsort, sk\u00f6rd och optimering av pressmetod.<\/p>\n\n\n\n<p>Det \u00e4r en uppgift vi l\u00e4gger ner v\u00e5r sj\u00e4l i, f\u00f6r att den produkt som b\u00e4r v\u00e5rt namn ska h\u00e5lla h\u00f6gsta kvalitet.<\/p>\n\n\n\n<p>Vi har alltid engagerat oss i att sprida kulturen bakom den extra jungfruoljan. Det ger oss m\u00f6jlighet att studera alla variabler och faser g\u00e4llande odling, sk\u00f6rd och bearbetning.<\/p>\n\n\n\n<p>Cirka 80% av v\u00e5ra oliver \u00e4r Moraiolo, en olivsort som \u00e4r n\u00e4ra nog exklusiv f\u00f6r Umbrien och som k\u00e4nnetecknar v\u00e5ra oljor fr\u00e5n Assisi-Spoleto. Ytterligare 12% \u00e4r Frantoio och 4,5% \u00e4r Leccino, tv\u00e5 f\u00f6rn\u00e4ma olivsorter som \u00e4r typiska f\u00f6r centrala Italien.
